Çiğköfte is one of the special flavors of Turkish cuisine. Çiğköfte, prepared by blending and kneading bulgur, minced meat, spices and other ingredients, is a snack especially preferred by meat lovers. This article will explain in detail how to cook raw meatballs.

Necessary materials​

  • 2 cups fine bulgur
  • 250 grams of ground beef
  • 2 tablespoons of isot
  • 1 tablespoon cumin
  • 2 tablespoons of ground pepper
  • Half a glass of oil
  • 2 tablespoons pomegranate syrup
  • 2 tablespoons lemon juice
  • Salt (according to your taste)
  • Greens (lettuce, spring onion, parsley)

Preparation​

Before you start making raw meatballs, put the fine bulgur into a suitable bowl and add enough hot water to cover it. Wait 10-15 minutes for the bulgur to absorb the water thoroughly. Then, put the bulgur into a bowl where you knead it.
Put 1 glass of water in a pot and boil it. Pour boiling water over bulgur and mix. Let the bulgur rest until it absorbs the water completely. A rest period of approximately 30 minutes is required.
Then, put the ground beef into a kneading bowl. Add the spices (isot, cumin, ground pepper) and salt. Knead well to ensure that the spices are incorporated into the meat. The minced meat will release water during the kneading process, so you can add a little more hot water than the bulgur to adjust the consistency.

Cooking raw meatballs​

An oven or a stove is usually used to cook raw meatballs. Here are the details of both methods:

Baking​

  • First of all, to shape the raw meatballs, spread a cloth on your table and put a handful of raw meatball mixture on it.
  • Roll the mixture with your hands into small meatballs and place them on the cloth.
  • After arranging all the raw meatballs you have prepared in this way, lay baking paper on a baking tray and place the meatballs on it.
  • Bake in a preheated oven at 180 degrees for 10-15 minutes until the raw meatballs are golden brown.

Cooking on the Stove​

  • Heat a flat, non-stick pan on the stove and add oil into it.
  • Place the raw meatballs in the pan and cook both sides over low heat. It will be enough to cook the meatballs for about 10 minutes, turning them occasionally, until they are browned on both sides.

Service​

After cooking the raw meatballs in the oven or on the stove, you can serve them hot. You can serve the raw meatballs you have prepared by wrapping them in lettuce leaves or spring onions. You can pour lemon juice, pomegranate syrup or optional pomegranate seeds on it. In addition to serving with greens, you can also serve lavash or bread on the side. Enjoy your meal!
